Our daughters friend is on the same cruise but has the later dining. In order for them to do kids club and evening activities together, is it better if we switch to have the same seating or is it not really that big of a deal? What will they “miss out on”?

Dining is a huge chunk of the evening between both seatings so they will "miss out" on anything between about 5:30 and 10pm or so, basically the whole evening together. I'd reschedule, that's a large chunk of the day.

Dinner time also affect when you go see the shows. I would change. If they are on the waiting list for early, wait until onboard to switch to late.

I much prefer late dining but IF you were preferring to both dine early, you could link your reservations in hopes of having a better chance for the late diners to be moved to early. If that doesn’t work and you are unable to switch post boarding, I’m sure the early diners could ask to switch to late at the time.
