Hi. We will be arriving to Orlando late evening and staying offsite the night before our checkin at the Poly. Will we be able to drive to the Poly and park then head to MK that next morning before we check in?

In my experience, yes. On my last trip I arrived at 10AM, parked, checked in and went into Epcot. Stayed at Caribbean Beach. When the room was ready (at noon) I got a text.

I would check in first then head to the park - doesn't take long to check in!

do the online check in and go ahead park into your home resort, everyone does it, your room won't be ready but you can start your vacation.
Have a great trip!

Having just been following another thread about car break ins at WDW resorts and parks I would definitely recommend taking your luggage into the hotel and not leaving valuables in the car.

Will they keep your luggage for you?

Go park, drop your luggage with bell services, check in, then go enjoy your day. After 6AM, all is well in the world. Have fun.

They did for us and it was in our room when we returned!

You must have been in club level, they don't normally deliver your bags to your room until you are there if you leave them with bell services. You have to call down from your room.
