If we have the deluxe plan, can we order a different dessert than what comes with the Patriots platter? I am eyeing the Apple fritters. I am guessing we can also get specialty drinks as well.

The Patriot's Platter comes with your choice of Ooey Gooey Toffee Cake, Banana Cake, or Apple Fritters.

The Patriot's Platter doesn't list an included dessert that I can see so since you are on the DDxDP and are entitled to sweets I'm sure you can order any dessert offered by this eatery. As for speciality drinks you are entitled to one per adult but I don't know what the price range is. Perhaps someone else can better respond to that part of your questions.
