Can anyone tell me the differences between all these? I'm wanting to transfer old VHS videos to DVD but am wondering which of these formats to choose and whether my two year old DVD player will even play any of them.

It depends on the age of your DVD player more than anything. According to everything that I've read, DVD-R and DVD+R should both work on newer DVD players.
