Considering adding just one night to our Feb trip (staying Poly DVC Studio).
Family of 5. 3 kids (17,14,10). Extra day would be used just to explore, dinner, maybe pools of warm.
Beach Club or Boardwalk??? Will be tending DVC points
Which would you choose and why?
(we have never stayed at or visited either resort)

Have you checked availability for your night? That could very well be the deciding factor. But if both are available, I would choose BCV for the pool.

both are available. BC direct from disney. BW, I would rent points and that is making it about $250 / night less than BC

We have stayed at the Boardwalk and Beach Club several times. $250 for one night is a pretty big difference. It would influence my decision.

You mentioned wanting to explore, dinner, and maybe pool if its warm.

Working backwards, the Beach Club pool (called Stormalong Bay) generally is considered the best WDW hotel pool. But it gets crowded so get there early.

The Boardwalk pool (called Luna Park) is not as good but it does have (IMO) the best WDW hotel water slide. You children (ages 17, 14, and 10) might really enjoy that.

Concerning exploring and dining, you will be able to do those equally at either resort, since both resorts are located Crescent Lake. The boardwalk itself is much more active at night and it is easier to reach from the Boardwalk, but you also can walk to it from the Beach Club.

Really, I think it comes down to looking at online photos and seeing which one appeals to you more, given the price difference. Is the Beach Club worth $250 more than the Boardwalk? Only you can answer that question for yourself.

Moving all your stuff for just one night with a 4 PM check-in and 11 AM checkout is not worth the hassle. Either add an extra night at Poly or shorten your Poly stay by one night and add a 2 night stay at BCV/BW.
I second this. Not worth it.

We have done one-night stays (and then switch hotels) a few times. It works well, if you go into it prepared.

I do agree that a 2-night stay works better.

the beach club pool has a lazy river current that is too strong for a 5 & 3 yr old.
