How do you keep track of which discount card to pull out where? or do you just pull them all out and they take the highest %?"
 
I have been wondering the same thing. I was going to put a spreadsheet together, but decided that was too much work.lol. I know they give you some kind of newsletter when you get in, but I haven't been on the first DVC trip yet so I'm not sure. But thanks for asking it. Lets see what everyone says.
 
DDE usually has the greatest discounts of those offerred. Basically, all of the sit-down restaurants in the parks and Disney owned resorts take the DDE. At DD it's a little harder to keep track of. My DH carries the list in his wallet when we're at WDW.

What we did a few weeks ago when we went was just as someone else suggested. We take ALL our discount cards with us and fan them out like a deck of cards. The server then chooses which one they accept and which one of those accepted cards has the biggest discount.

As I understand it, the restaurants can change what discounts they do and don't accept at any given time. I'd make sure to have all your cards with you.

One other thing we discovered to our dismay was that some of the wait staff were slightly uneducated as to what discounts they did have. We had to repeat our request several times for them to finally understand what discount we wanted to use.

I asked when I went in to the restaurant I asked which discount they acccepted, but I agree that sometimes the servers don't really always know, so it's best to research it before you leave home.
