Okay this is the information from the AllEars website for Downtown Disney:

Shops open 9:30 a.m. to 11:00 p.m. Sunday - Thursday
Shops open 9:30 a.m. to 11:30 p.m. Friday - Saturday
Restaurants open daily 9 a.m. - 11:00 p.m.
