Don't know how far down I-65 you'll be going, but just south of Montgomery, AL there is a little stop called Priester's Pecans. Great little place to stop to break of the monotany of the drive. And if you catch them on the right day, you can go upstairs and watch them make and package some of their candy! And did I forget to mention the free samples? All over the shop you can get free samples of the candy - pralines, peanut brittle, etc. Enjoy!

They have a location in Perry GA at exit 134 here's link. I don't remember ever stopping there but I think we bought something around there. It was a long time ago and may have been it.

how much time will you have at these stops? are you looking for tourist attractions as well? I agree with Mammoth Cave. If you have time, the Louisville Slugger museum is also a great place to visit.
There is an adorable town off exit 86 in Kentucky called Glendale. There are 2 restuarants, The Depot and The Whislte Stop. Both have good food, but The Depot is a little fancier. The Whistle Stop has a lot of traditional southern & Kentucky fare.
If you're interested in American Indians or early US history, there's the New Echota Historical Site in northwest GA just off I-75 north of Calhoun. It's the site of the last capital of the Cherokee Nation, before the infamous Trail of Tears forced migration to Oklahoma.
