We have a free dining bounce back offer booked for December, requires a 2 day park hopper per person. Can I upgrade the park hoppers to regular 3/4 day tickets once we get to the parks or even before we get to the parks? I don't see us needing park hoppers at all.

You can upgrade the number of days, but you have to keep the park hopping.

Yes, you CAN.
After you check-in, you can do any kind of "upgrade" that you like.
(An "upgrade" is defined as trading to a new ticket that costs more than the original ticket.)

So, a 2-day Hopper ticket costs $291.81.

A 3-day Base ticket costs $324.83.
A 4-day Base ticket costs $$404.70.
(Each of those qualify as "upgrades.")

All prices include tax.
