We (me,dh, dd9 & ds6) plan on leaving the parks in the afternoon for lunch and a break at the condo 3 days (Windsor Hills).
We're hoping to check out:

Trex
Wolfgang puck cafe
Earl of sandwich
:confused3

Feb 15th to 18th ...park crowd levels 1-4 out of 10

Will we get in these places without adr's?

Earl of Sandwich is counter service - so no ADRs.

One of the Wolfgang Puck restaurants is counter service, and one is a table service (can't remember what the names of each thing are), so you wouldn't need ADRs at the counter service. I don't know how easy it is to get into the TS without an ADR. Probably not a big issue if you are going at a low crowd time, but I haven't been there myself.

T-Rex is quite popular, I would make a reservation there.

TRex is quite popular and I couldn't get an ADR for our trip last summer no matter how many times I tried. We walked up to the restaurant anyways though and were able to walk right in. So if you can't get an ADR here, try walking up anyway. My family really enjoys TRex!

Depends on the time of year you're going and the time of day you want to eat. We walked up to T-Rex in mid-October 2010 at lunchtime and had no problem getting a table immediately. We also walked into Raglan Road (also in DTD) that trip at dinner time with no wait. For February I don't really think you'd have a problem, honestly.

We've been to T-Rex 4 or 5 times and never walked up - there was always a moderate line (at best). I must be going at the wrong times because there always seems to be a line! From what I can tell, if you have a reservation, you still get in line and they call your name and pull you out of line. We had reservations there once but ended up coming early so didn't use it. As far as I can tell, you have to call for reservations. I have never seen the Disney Dining Reservations website show availability. I called and got one no problem.

We ate at Trex last summer and in the process found out that since they are not owned and operated by Disney, only a limited number of reservations are given to the Disney reservation center. However if all of Disney's available slots are filled, you can still call TRex directly and make a reservation.

I'm not a big sandwich person but love Earl of Sandwich.

We also love T-Rex, September was our first time trying this restaurant we are returning to Disney in May and our 1st meal will be at T-Rex.

My DH and I have eaten at T-Rex without an ADR and only had about a 15 minute wait. It was last year, in December. Maybe because we were only a party of 2?

We had an ADR at Wolfgang Puck Cafe on a Sunday at 6pm last month. I believe the date was 12/5. We arrived early and did not have to wait, others without ADR's were also being seated right away. However, when we left, about 7:30, there was a line. Not sure what the norm is there, but we thought the food was WONDERFUL, one of our best meals at WDW, probably hit or miss on needing an ADR. Absolutely worth a shot!

Even though you don't need ADR's for Earl of Sandwich it's still a good idea to go early because the lines can get long since they are very popular. Although they do keep them moving very fast and sometimes it will look worse then it really is.
