Double duty meals

Here are a few I have.

Chuck roast in crock pot w/rice and vegtables

Next day (or the day after) Cowboy pie (kind of like shepherds pie) shred the roast beef, add bbque sauce to it. Put in casserole add mashed potatoles and shredded cheese, heat until warm in oven.

Pork butt in crock pot (usually make sandwiches) and a veg. tray.

Next meal, top large baked potatoes with the shredded pork and any other topping (cheese, sour cream, etc.)

And lastly...Bean dip (my sister gave me this recipe, I don't really know the name of it) its 1 can ea. of black beans, corn, black eye peas and a jar of picante sauce (mild to hot, whatever you like) drain the black beans and corn, but not the black eye peas. Mix everything together. Chill. Serve with tortilla chips. (I usually have this on taco night)

Next meal, drain and make quesadilias. I use monter. jack cheese.

I marinate a lot of chicken breasts in a chipotle/lime marinade and grill them. The first night we eat them with cole slaw or some other side. The rest of the week I cut them up and put them on salads or use them in quesadillas or burritos/wraps or tacos.
 
Well, there's always roast chicken!
Roast it the first day with carrots and potatoes.
Next day there is chicken salad sandwiches for lunch and chicken and gravy with mashed potatoes for dinner.
Then there is chicken soup with celery, rice (or pasta), carrots or whatever you like in your soup.

Then there is ham. Baked ham the first day with peas and roasted or mashed potatoes.
Next day ham & eggs for breakfast. Ham salad for lunch. Scalloped potatoes with ham for dinner.
Next day breakfast is scrambled eggs with ham & cheese. Lunch is pasta salad with ham chunks in it.
Another breakfast or breakfast for dinner is ham/potato hash and fried eggs.
 
We do a homemade pizza night almost every week. During the summer since we don't have AC, we throw the pizza stone on the grill.

I always use my leftovers from the week on my pizza:

Left over chicken is turned into BBQ chicken pizza

Left over meatloaf is turned into cheeseburger pizza

Left over taco fixings is turned into taco pizza

Left over sausage is turned into a sausage pepper and onion pizza

Left over bacon from breakfast is added with left over lunch meat from the week and pepperoni and turned into 3 meat pizza.

Left over veggies are turned into a white veggie pizza
