Are you asking what podcasts are in general, different ways to get them, or which ones we listen to?
I use the raw RSS feed for the podcasts I listen to and then aggregate them in a reader (my choice is reader.google.com). I only use iTunes as an interface to my iPod, I don't allow iTunes to even touch my music library or podcasts.
The RSS feeds work best if you use any player other than an iPod. If you do use an iPod and don't want to deal with the feeds you can subscribe with iTunes and have your iPod auto update.
As far as what I listen to, I listen to a mix of Disney, Tech, and Soccer Podcasts but none of them while running. I like don't listen to anything other than nature and my own steps while I run. On my commute or while I'm around the house I listen to:
Disney: DIS Unplugged, Magical Definition, WDW Radio, WDW Today
Tech: Buzz out Loud, TWiT, Security Now, Cranky Geeks
Soccer: World Soccer Daily, Guardian Football Weekly, ESPN Podcast
