Soarin', Test Track, Spaceship Earth, Mission Space and Living With the Land. Pop into the Sea, you can skip the clam mobiles if the line is long by going in through the exit on the left side as you look at the building.

As for snacks, we're there for Food&Wine and there's too much to choose from to single things out, especially now that there's no more Fisherman's Pie at the Ireland kiosk.

Agree with all the rides about but would throw in Journey into Imagination because I am a sucker for Figment and that song is a total earworm:rolleyes1.

Non Food & Wine snacks....crepes in France, school bread in Norway, gelato ice cream sandwich in Italy.
 

Soarin', Test Track, Figment, Beer and a pretzel in Germany, Dinner in Italy (Tutto or Via Napoli, both good), Spaceship Earth, Mexico boat ride.

Everything else is icing on the cake.
 
Must do attractions would be Spaceship Earth, Soaring, Living with the Land and Voices of Liberty and then just wandering around World Showcase. Must eat breakfast would be the Brie and Apple Baguette sandwich at Les Halles, must eat lunch would be something at Spice Road, must eat dinner would be Teppan Edo. I'm not a huge fan of Illuminations, but if I only had one day I would stay and watch it and chill out till the masses exit the park, then take a leisurely stroll out.
 
I would FP Test Track, Living with the Land, and Spaceship earth. I would rope drop Soarin' and then try to do any other rides where the wait times are under 20 minutes...and if that means no more then that's ok! I would buy a popcorn bucket (if I didn't already have the design) early in the day for snacking throughout the day. I would eat Fish and Chips from Yorkshire County Fish Shop as my main meal and probably share with DH a brat from Sommerfest or nachos from La Cantina de San Angel if we needed more. Throughout the day I would get a couple Grand Marnier Grey Goose Orange Slushes from France, a margarita from Mexico, and a Strongbow in England. I would enjoy that day :-)!
 
Soarin, Living with the Land, passion fruit margarita and dip trio with chips from La Cava, Club Cool, wandering World Showcase and Illuminations.
 
My must do's are Canada, The United States show, Frozen, Mission Mars, Figment, Soarin, Living with the Land and Mission earth. I enjoy test track, but I think it goes down way too much, I even enjoy the Fiesta ride. I would have to say with F&W going on I found the Greek Nachos to be really good value, if you do get them let them settle a bit because the pita chips soak up the juice and become really flavorful.
 
This is food wise theoretical cuz I'm not a snack eater in general and haven't spent enough time @ Disney to acquire the habit:

Soaring.
Spaceship Earth
Mission Space


Falafel or gyro or merguez sausage with tabbouleh at one of the Moroccan joints.

Be nice if I could get a weisswurst and pretzel but suspect the meat would be bratwurst instead from a Germanic spot. I'll always take a beer with that. Be happier still if I could get a bunderfliesh plate but haven't seen it about either:(.

A pate and relish plate from France? Or or ham and butter on some crunchy bread? Orrr a slice of veggie based quiche!

A ramen noodle bowl with lots of veggies and a lil protein from a Chinese QS...or maybe some pan fried pot stickers?

Sushi or sashimi...better yet a mix!

Fish and chips.....slurpy yum yum. Don't hold back on the malt vinegar.

Belgian pommes frites w/ mayonnaise!.....think I'm delirious again.

Errrrr I suspect I live in a dream world:D;).
 
Must do rides for us are Mission Space, Test Track, Three Caballeros, and Spaceship Earth. We enjoyed the caramel corn in Germany and our dinner at Nine Dragons.
 
Lots of terrific suggestions already, so I'll stir things up with an alternative "don't miss" strategy:

1) Go by the Champagne and Wine kiosk by the France Pavilion and get a couple of supersize Grey Goose Citron slushies;
2) Proceed to the Canada Pavilion to top off your slushies with a La Fin du Monde or two (the name alone may be foreshadowing for the rest of your day);
3) Wait approximately 30 minutes - and now any ride you ride at Epcot will be the best (or worst) ride you've ever been on. The only downside is that you may not actually remember it later.
 
Must do rides/shows: Soarin', Living with the Land, The aquarium at the Seas (no need to take the ride, just enter through the gift shop off to the left), Spaceship Earth. Test Track, the American Adventure, and finish the day with Illuminations.

Must do snacks/food? That is even more personal and depends on whether you are there during food and Wine but I'll list a few of my basic favorites:

Breakfast: the breakfast platter at Sunshine Seasons
Lunch: Fish and Chips at the Yorkshire County Fish Shop at UK
Dinner: Biergarten in Germany

Snacks: desserts from the Boulangerie Patisserie in France
pretzel from Sommerfest in Germany
croissant doughnut from the Refreshment Port
Mickey Bar from many carts
 
A beer and vodka slushy.........yeah every subsequent ride would be some kinda superlative, lmao.
 
Macaron in Italy, Soarin', and after seeing it for the first time last week: FEA. I actually don't think it's overrated at all.
