i went every where but the deck.. i cooked supper, took a nap, wentto video store and returned dvds, and now i'm back.
 
I cooked, ate,helped DD make Irish Potatos... hmm kinda sweet, don't think we got it right yet LOL

ok gotta askl,, what the heck is "irish potaoes"?

i thought them was hte red ones
 
Its a cookie actually! She has a book report and need to make something "Irish" to bring in. The recipe we used didnt have the cream cheese so I think this recipe is better, most do use cream cheese.

Love coconut so I like these of course.

Irish Potatoes
These little potato look-alikes won't have anyone fooled once they pop one into their mouth. They're sweet, creamy and a cinnamon lover's delight. I never had one of these until I visited the Philadelphia area where they're sold all over prior to St. Patrick's Day. Now I make them every year for my family, and they often disappear before St. Patrick's Day arrives.
INGREDIENTS:
• 1/4 cup butter, softened
• 4 ounces regular cream cheese, softened (don't use low fat or whipped)
• 1 pound powdered sugar, plus extra for coating hands
• 7 ounces sweetened coconut flakes
• 1 teaspoon vanilla
• 2 tablespoons ground cinnamon
PREPARATION:
With mixer, cream together cream cheese and butter in a medium bowl. Mix in sugar and vanilla, being careful to add sugar slowly to avoid creating a large sugar cloud(!). Stir in coconut flakes. Put cinnamon into small bowl.
Coat dry hands with a little powdered sugar and using your hands take small pieces of mixture (about 2 teaspoons apiece) and form into potato shape.
Drop potatoes into cinnamon and roll to coat. Place on baking sheet. When all the potatoes have been formed and dipped in cinnamon, refrigerate for several hours until firm.


do you have any idea how hard it was to find a recipe without bailey's or wiskey in it! :rotfl:

I DISed, ironed, DISed, cooked, DISed, tried to look at Tour Guide Mike but he gives me a headache, took a walk with DS, DISed, heard DS yell something and then heard the door slam. That was three hours ago. Wonder where he is? :blush:
 
Speaking of DS, Missy, he was very impressed with my Princess Piggy! He says you're cool!

Hey don't ignore loud noises! DD heard a crash and ignored it and it was the cat, fell out the window, screen was not in from cleaning it :) She was ok tho.

Turns out he was telling me that he was leaving. He just called from down the street and says he's spending the night. WTH? And then tells me to pack him a bag and walk it down there. Riiiiight. I'll get right on that son.
