Why does the dolphin hotel have a big fish on top not a dolphin?

It is a dolphin fish, not a dolphin mammal, like we are used to seeing- think Sea World, Flipper, etc. Those are mammals, but there is a dolphin that looks like that that is a fish.

Coming south on World Drive from the MK area, I swear it looks like a penguin.
