Does MS let you pay cash for extra nights at 11 months?

I only have enough points for 5 nights but want 7. Can I pay cash for the other nights?

Most likely yes. It may depend some on what room category you are looking for and then everything is dependent on availability but that shouldn't be an issue at 11 months. If something weren't available then I'd check back a month or two later.

The 25% Member discount may not be available right at 11 months, but could still be applied later if/when available (this would occur automatically, you do not need to call back to check). If a cash night is available for the dates you want, I'd reserve it and hope that it will become a discounted night.

The first priority for MS is to make DVC reservations using DVC points. For some dates, there may never be cash availability (although that is unlikely) but no discounted rate since they will need to see if the villa will be needed for DVC point reservation - either from reservations made or from past history for that resort/villa type/date. In most cases, it would be weekend nights that are most likely to be available with the cash discount, but week nights can also be discounted.

We had the same thing happen to us. MS told us that we could only pay cash for the rooms at seven months out. So we booked with points first then when seven months came around we added on with the cash purchase.

I booked our Easter reservations at the 11 month window (at HHI) and I was able to add on a night with cash at that time. I even managed to get the discounted rate. Not sure how it happened, but I ended up with a 2BR and paid a total of $258 for it...and it was Easter Sunday!

Availability will all depend on the resort, villa type and date(s) of the cash reservation. Some cash nights will be available at 11 months (due to MS knowing the past history for those dates), some will only be available within 7 months (when availability is currently known) and some will not become available at all - based on resort, villa type and date(s).

The discounted rates will follow the same format - some dates will have the discount (likely if they come from breakage inventory) and some will not (likely if the availability comes from non-DVC option points - like the cruise or non-DVC resort reservations).
