Does it matter if when they ask you if you are on the dining plan and you say yes that you don't actually use the plan for that meal?

Because of the way our flights work, I think we eat at 5 TS restaurants, but will only have 4 TS credits. I'm fine paying OOP, but I'm not yet sure which meal it will be for. So does it matter if my reservation says DDP and I choose to pay OOP instead? I can't see why it would, but you never know :)
 
It doesn't matter - Disney is just collecting data. The servers & restaurants won't have any idea(or care) what you told the CM who made the ADR.
 
I had thought that the notation did make it to the data provided to the restaurants. It would be used to help the server help you understand what is and is not included. However, if it wasn't provided, or was provided and then you changed your mind, you need only inform the server when you're seated.
