Does Anyone Make Their Own Antipasto Platter?

I had an antipasto salad (no lettuce) at an Italian restaurant awhile back and I'd like to make a platter of it at home. I know it had marinated artichoke hearts, tomatoes, mozzarella cheese balls, salami, olives and prosciutto but it seems like there were other things as well. So what do you put on yours? And what kind of wine do you pair it with?
 
Proscuitto, marinated mozzarella, shaved parmeseano-reggiano, cherry tomatoes drizzled with olive oil and fresh basil, crostini with riccotta...
 

Proscuitto, soppresata, fresh mozzarella, asiago or parmagiana regaino, sun dried tomatoes, roasted red peppers, balsamic marinated mushrooms, olives, roasted garlic and artichoke hearts.

all of the above...lol and I'd pair it with a white wine, a Pinot Grigio or a sweeter one like a Reisling, but I think the Pinot would be work very well with it. :)
