Does anyone have a recipe for guacamole?

I bought several nice avocados today and I want to make some gaucamole. The trouble is that I don't know how and my cookbooks don't list it. There are some recipes on the 'Net but I don't know if those are good or not. Does anyone make this stuff themselves?
 
I make it all the time, but I don't use a recipe. I just add in spices that I like a little at a time until it tastes right. I use chili powder, cumin, seasoned salt, sugar, lemon/lime juice. I don't like mine spicy and I don't like it with tomatoes.
 
You know what I do? And it's soooo easy...

I take fresh avocados, mush 'em up, and add in a can (or whatever you're comfortable with) of drained Ro-Tel. I then add salt to taste.

Simple and good!
 
This is my favorite guacamole recipe. I got it from an episode of Barefoot Contessa. I add more Tabasco than what the recipe calls for. If there's something in the recipe you don't like, then just leave it out. If you like cilantro and/or fresh jalapeno, go ahead and add it or anything else that sounds good to you. :)

4 ripe avocados
3 tablespoons fresh lemon or lime juice
8 dashes Tabasco sauce
1/2 cup onion, finely chopped
1 large garlic clove, minced
1 teaspoon salt
1 teaspoon ground pepper
1 medium tomato, finely chopped

Halve and pit the avocados, then scoop the flesh into a bowl. Add the lemon or lime juice, Tabasco, onion, garlic and salt and pepper; toss. Using a sharp knife, slice through the avocados in the bowl until they are finely diced. Add the tomatoes and toss to combine. Adjust the seasonings as needed.
 

I don't measure anything, but I use (obviously) avocados, a bit of lime juice (or lemon juice in a pinch), chopped tomatoes, onion and cilantro, garlic powder and a bit of pepper. It's yummy!
 
DH's grandfather had an avocado "ranch". (How do you ranch avocados - it sounds like they might need to be herded or something?)

So we have made lots of guac over the years. It's one of those things better done to taste than to a recipe. There are several varieties of avocados & each has its own taste. Some are richer, some are sweeter. Basics:

Halve and pit the fruit, remove the skin.
Mash.
Add some salt & lemon juice - start with a small amount of each, you can add more if you need it.
Add fresh diced tomato.
Add fresh chopped onion.
Add some garlic - a fresh clove if you've got it. Garlic powder will do too.
Dash of Tabasco.

Mix well. Taste. Adjust ingredients as necessary. Try not to over-power the avocados - good guacamole should mostly taste like avocado, not the other ingredients.
 
Mine is pretty close to the others

Avacado
diced tomato
diced onion
garlic powder
salt
pepper
lime juice (lemon in a pinch)

I don't measure, just season to taste.

I don't like cilantro, my friend Erin says it tastes like soap, so I skip that but a lot of people add it.
 
Thanks everybody! I don't have Rotel in the house (why didn't I think of that?) but I have the rest of the stuff. I'd better start chopping! ;)

Well, you when you think about it, it has a lot of the ingredients that the others use, minus the cilantro (at least I think it doesn't have it), which I can't stand.

Can't say I think it tastes like soap, but I do not like it. :crazy2:
 
What is Ro-Tel?

For my guac I puree up some jalapeno peppers (no seeds!), cilantro, red onion, and mash up with the avacados. I then add some larger pieces of cilantro, red onion, and halved cherry tomatoes. I also had a little lime juice so it won't turn brown. Hmm, now I want a Pacifico, guac and some tortilla chips!

I had a friend who insisted that you have to add mayo to guac. Yuck!
 
By the way, for those not familiar with Rotel, add some to melted Velveeta cheese and it makes awesome cheese dip.

Add some hot dog sauce to that, and it's even better!
 
Yes, Rotel is wonderful in cheese dip. I will have to try it in gaucamole the next time.
 
If you don't have Rotel & don't want to chop up the other stuff, you can use some salsa. Yummmm! Now I want some guacamole!
 
The recipes we use for guac around the house are similar to most of the ones in this thread. But if I am in a hurry and dont feel like chopping a thing, I take a short cut. In the produce section at the market they have these little packets called "Great Guacamole" or "El Torito Guacamole". I will mash up the avocados and then pour in the dry powder from the packets. Stir and chill. Thats it. Very easy and yummy.
 
Yes- what Stacerita sied! Soetimes, I add chopped tomatoes and olives to the packet, and a bit of sour cream or mayo, just o make it a bit creamier. Tastes great- not sure how authentic it tastes, but never had a complaint.

My mom uses fajita seasoning (which you may not find in your local grocery store but we live in texas where that stuff is everywhere!), lime juice, jalepeno (as much or as little as your taste buds can take ;) ), and onion. Occasionally we just mash the avacado up with some salt to taste and our favorite salsa. A medium salsa usually gives it a nice little kick but if you like your dip really spicy you can add the hot kind.
 
I didn't get around to making it tonight but I definitely will do so tomorrow. I DO have a jar of medium Pace on hand...
 
I just use whatever Salsa I have around and mix it with the avacado. Really easy and always good. :) The Pace you have will work fine. Good stuff, my kids won't touch it so I don't bother often.
