Anyone have a really good, rich, SOFT sugar cookie recipe they'd like to share? All the ones I'm trying are too crispy! I want them almost cake like!

My SIL made these for Halloween - They were AWESOME!!

1 1/2 cups butter, softened
2 cups white sugar
4 eggs
1 teaspoon vanilla extract
5 cups all-purpose flour
2 teaspoons baking powder
1 teaspoon salt
In a large bowl, cream together butter and sugar until smooth. Beat in eggs and vanilla. Stir in the flour, baking powder, and salt. Cover, and chill dough for at least one hour (or overnight).
Preheat oven to 400 degrees F (200 degrees C). Roll out dough on floured surface 1/4 to 1/2 inch thick. Cut into shapes with any cookie cutter. Place cookies 1 inch apart on ungreased cookie sheets.
Bake 6 to 8 minutes in preheated oven. Cool completely.
And the icing she used:

1 cup confectioners' sugar
2 teaspoons milk
2 teaspoons light corn syrup
1/4 teaspoon almond extract
assorted food coloring
In a small bowl, stir together confectioners' sugar and milk until smooth. Beat in corn syrup and almond extract until icing is smooth and glossy. If icing is too thick, add more corn syrup.
Divide into separate bowls, and add food colorings to each to desired intensity. Dip cookies, or paint them with a brush.

This came from a friend. I've never made them, because I just didn't believe the 1/4 cup of vanilla part. But I recently witnessed her baking them and they tasted great. They are big, soft & sugary - and they (of course) taste of vanilla too. You could probably half this recipe. It makes quite a few cookies, but they get eaten pretty fast.

1 cup butter
2 cups white sugar
3 eggs
1 cup buttermilk
4 1/2 cups sifted all-purpose flour
1 teaspoon baking soda
1 pinch salt
4 teaspoons baking powder
1/4 cup vanilla extract (not a mistake - 1/4 CUP)

Cream the butter and sugar until fluffy.
Beat in eggs, one at a time.
Add the buttermilk.
Sift together the flour, baking soda, salt, and baking powder and add to the creamed mixture.
Blend in 1/4 cup of vanilla extract and stir well.
Let dough rest for 10-15 minutes and preheat the oven to 350°.
Drop tablespoonfuls onto greased cookie sheets.
Sprinkle tops with sugar and bake at 350° for 10 minutes.

Yep, I go buy a package of Pillsbury sugar cookies. The pop and bake kind. My dd and I normally eat them before we get around to baking them though.:p

Go to allrecipes.com I found one there..had 5 stars and was rated by over 500 people..something like Best Rolled Sugar Cookies...I just made them over the summer and just finished today making them for Christmas...exactly as you described...so good!

I don't like my sugar cookies crisp either. So--here is what I do. I go to Gordon's Food Service and buy a big package (72 cookies) of frozen sugar cookies. They're already cut out in the shapes of trees, bells, and stars.

Someone brought these into work and when I asked for her recipe, she shared her secret with me! They are wonderful and easy. I'm baking some today.
