Does ANYBODY know if you have to refrigerate 7 minute frosting??

It's a marshmallow/merangue type cake frosting.

It's made by beating egg whites, sugar, corn syrup, vanilla,and water for approx. 7 minutes over a double boiler.

In this instance I'm putting it on a coconut cake.

I've made it before, but it's been a while, and I can't remember if I put it in the fridge or not. :confused3

For some reason I wanna think putting it in the fridge caused it to dissolve faster, but I could be thinking about somethig else.

I just double checked my cookbok and you don't need to refrigerate it (eggs are boiled, therefore cooked well enough not to need to)

But should use it/eat it w/in 24 hours if not refrigerated


I rarely make that one since I am lazy and just use my shortening & powdered sugar icing on everything ;)
 
Since it has eggs that were just heated but not really baked (unlike the eggs inside the cake), I'd refrigerate it. You may have problems with the frosting "melting" when you take the cake out of the fridge, so you'll want to take it out right before serving and then put it back right away.
