Do we have the right signatures on our list?

I’d take off Narcoosees and add FF. If you don’t eat red meat take off yachtmans ( one of our faves) and add Artist Point.
 
I’m surprised some many people enjoy AP We have eaten there numerous times and never found it great, same with Citricos. Different strokes like they say.

I personallay enjoy all the places you have on your list OP and the majority of Disney sit downs we eat at are signature, Jiko used to be fantastic but the last two times has slipped. If you do go to DS the Bori Bop at Morimotos’s is FANtastic.

Opinions on HBD?
We enjoy HBD, but it can be noisy. Our service has been good the last two times, and their are things on the menu we enjoy. It's a nice respite from the park, as well. However, sometimes the wait for a table--even with a reservation--can be tedious. While it's called a Signature, it doesn't rank with some of the others.
 

Okay! So many thanks to people who told us to go to a sig vs 3 sit down meals a day. Here is what we have on our list (not our ADR day yet so just planning still)

Cali grill brunch
Narcooossees
Citricos
Yachtsman

We are also planning on paying OOP for HDDR.

About us- 2 adults and a 1.5 year old who eats out often and is well behaved. DxDP. Staying at BLT. We love seafood/shellfish and aren’t super picky but I don’t eat red meat or pork.

Ones we considered but don’t have on our schedule right now:
1. Jiko- been seeing mixed reviews
2. MP- REALLY like the idea of this one but read its not kid friendly (I know they ALLOW kids but I read people get frustrated at the idea of kids here).
3. Flying Fish

Husband doesn’t want to do Disney Springs this trip. What do you think? Any subs you would make? One we missed thats awesome?

CG brunch- this will be our intro to the restaurant as well and it seems to have a laid back vibe that will work well with children of all ages. Taking 3 kiddos ( 17, 12.5 and 9 y/o) this trip. It's nice that you'll be able to come back for the fireworks just remember to keep your receipt. I'd keep it.

Narcoossee's- ate brunch there last trip (no longer offered-sniffles) and would certainly return for dinner. Many different types of seafood and a relaxed yet professional service with nice water views earlier in the evening. Given your food preferences I'd keep it.

I would trade Yachtsman for either FF or MP. FF is awesome and although specialising in sea offerings still has delicious poultry dishes. I've see children of all ages there enjoying themselves. Taking the 3 rugrats for an early dinner at MP as my thinking is the couples who don't want any distractions will tend to eat later. My experience in the country of France is it's normal to bring children to nice restaurants and like every other country's waitstaff they know how to deal with them.

I loveeeeeee Jiko's (it's one of my 3 fav siggies @ WDW), think AKL is a fantastic environment for people of various all ages and believe anyone could have a great dining experience there but am not sure if it will fully meet your particular eating criteria. I had the seafood curry and didn't find it seasoned as nicely as their red meats.
 
I'm pleasantly surprised to see the positive feedback for Artist Point.
Artist Point was one of our top 3 signatures and as the feedback across forums and review sites dropped, so had our experiences. We loved our meal there this past January, so maybe things are coming back up.

Nearly every restaurant has ebb and flow over the years, and AP wasn't immune. I've been going there for a dozen years or so, sometimes twice a year, and our first few years it was topnotch. Then, it hit a rough patch for a few years with very uneven service and inconsistent food. About three years ago, they switched the leadership team there and brought in a new executive chef, and since then, they've been consistently good again. . .which is not to say people don't have bad meals there anymore since every place has off nights. Still, AP has rejoined the ranks of a top Signature, at least for us.

I agree. We didn’t like AP at all. I did recommend it to the OP because so many others love it and they stated they didnt like red meat.
 
I'm going to be a bit different here and not really recommend where to go and where not to go. As you are seeing on this thread, opinions are like belly buttons and booties, we all have them. LOL... I say look at the menu's, see where you are going to be for that day and then pick your ADR's based off of that. Don't let me or others persuade you. I have not been to one signature restaurant that I would call terrible. Some were better than others in my opinion, but to other people they felt differently.

I remember 10 years ago when I was going to WDW for the first time I based all my ADR's on what others said were must do's or what was must not do's. In time I have found that I like places not among the favorites and dislike some that others love. My personal favorites are Narcoossee's, Jiko, Tiffins, Citrico's, and Artist Point and for non Disney I love Blue Zoo. Again, go and experience for yourself. What I love you may not. :goodvibes
 
Yachtsman is my favourite restaurant at WDW, but if you don't eat red meat then I'm not sure it's worthwhile for you. You'd be better off with Flying Fish, IMO.
