Do restaurants try to bring out food very fast during lunch time?

The last time my Dad and I made ADR's was last August during lunch time at Prime Time Cafe and the Plaza. Anyway what I remember is our food very fast, which was around 10 minutes after being seated and giving our order to our server. We don't mind having a fast lunch because that means we can enjoy the parks a lot more and we did not feel rushed by the servers so they can turn the table over for the next guests that would be sitting there, plus we did not order any appetizers if that makes a difference or not. So is this just a case of the kitchen trying to get food out a lot faster? Finally I can't say if this is because of the Dinning Plan because my family and I were not on it and told this to the host when she asked if we were on it? Anyway what are your thoughts?
 
I have always found that unless you are going to one of the signature restaurants, food comes out very fast everywhere!

The UOG has a tip on how to slow things down: first of all, tell them you're not in a hurry. Secondly, order a beverage and tell the server you need more time. Third, order only appetizers/salads and say you need more time to decide. And then when your first course comes, place your order for your main course. If you want a hot beverage and/or dessert when your meal is done, tell them you would like a few minutes before you order.
 
Then for the restaurants that are not signature locations, is the reason for brining out the food so fast so the table can be turned over ASAP for the next guests who will need it?

I don't think it's necessarily that they want to shovel people in and out the door. I've seen a lot of posts saying that their meal wasn't brought out fast enough. We hardly ever order an appetizer. So our order is put in immediately. The kitchens are fast. But we don't feel rushed either and we take our time and enjoy things. My in-laws will always order at least one after dinner cup of coffee. And we don't eat very fast so it takes us just as much time as anyone else.

We've never been on the dining plan and our service has been just fine after they know we're not on it.

At the Mexican restaurants in our area, our food is brought out even quicker. It doesn't take that much time to put it all together.
