Do I understand the 7 month window correctly?

If we want to make a ressie at a non-home resort from June 20-27, would our 7 month window be November 27? And if we wanted to call day by day, we would start on November 20?

Not quite. It's 7 months from your CHECKOUT date. So, in both examples, go one more day.

If you want to reserve the whole thing, call Nov 28. If you want to go day-by-day, make the first call on Nov 21, which would be 7 months from checkout if you were just booking the first night of your trip.
 
If you are checking out on June 27, your 7 month window would be Nov 27. If your last night is June 27 and you actually check-out on June 28, then it would be Nov 28. However, Nov 27 and 28 are Sat & Sun, so you would have to wait until Monday Nov 29 in either case.

If you want to do day by day, June 20 would check-out June 21, so you would call on Nov 21 (but that's a Sunday, so you would have to wait until Nov 22 and do the first 2 nights).

Depends on the resort and the time of the year. If it were me and I'm hoping for time over Thanksgiving, I'd probably call day by day for the WDW DVC resorts and just once for HHI or VB.

You might call for the first night and ask the MS CM what the availability looks like for the rest of your stay. Then, depending on the answer, either make the rest of the calls day by day or with just one call . The CMs are really pretty good at predicting what is necessary.

When you book day by day, has anyone ever had to switch rooms because technically it a a new reservation each day?

No, it is not a new reservation each day. Just tell the CM when making the first call that you will be adding additional days. They will note the eventual check-out date on the reservation and keep it in an open status.

If you were to book a trip for 3 nights and decide months later that you want to add some additional time to the trip, those would probably be separate reservations. Even so, all you need to do is ask Member Services to link the two reservations together, and you can be guaranteed of not having to move.
