Do I have to book DDP for all the nights I'm there?

I'm torn between DDP and no DDP. We did an Aug. trip last summer and DDP was free. It was a great experience, awesome food, but too much and took a lot of time out of our Disney day (teenage daughters had to get all dressed up every day for dinner).
We're going in June and meeting friends there and I know one night we'll book a ressie for the Japanese restaurant. This got me thinking maybe I could book DDP for just some of my nights there, not all 9. Do they allow this?

No. My understanding is that you book the dining plan for the length of your package. If you split your stay, you could do a shorter package with dining, but then you'd wind up paying more for tickets. If you only want to do a couple of dinners, it seems like the dining plan wouldn't work for you. You can still make reservations even if you're not on the dining plan.

I think if you book a package with room, ticket and dining plan. The dining plan is for every night of your hotel reservation. So If you only wanted the dining plan for a portion of your stay, then you would have to book one reservation with dining and one without. The down side would be 1. you might have to change rooms and 2. the dining credits will exprire at midnight on the last day of your room reservation with the dining package. So the dining portion would not be available for the entire length of your stay.

You could have the ddp for the first 3 nights and then switch to a room only. Then you could buy your tickets for however many days total you'd be in the parks.
