Say you are on the Deluxe Plan and you want to do Narcoosee's. Can you do maybe Chef Mickey's for breakfast - just as an example - and then use your remaining points for the day to do Narcoosee's? So you would have used your 3 credits for the day?

Yes, this is true. but you don't have to use your credit on a day-to-day basis. You will have a pool of the total number of credits for your stay and can use as many or as few as you wish each day.
