Can anyone please tell me which if all of these rides will seat 3 people?

Magic Kingdom

Buzz Lightyear's Space Ranger Spin: 4 minutes 3 seconds
Dumbo the Flying Elephant: 1 minute 30 seconds
"it's a small world": 10 minutes 30 seconds
Jungle Cruise: 9 minutes 5 seconds

How old are all three people? Some of these vehicles will not fit three adults, but could hold two adults and a small child, depending on the size of everyone. But also keep in mind things like TSMM and Buzz Lightyear are only really designed for two participants.

2 ADULTS, AND 1 CHILD.
Hubby is 6'5
I am 5'10
neither of us are wide

Daughter is 4 yrs old, very tall, but only 36lbs
 
You'll be good on most of them.

The ones I THINK you'll have an issue with will be Dumbo and the Magic Carpets. Also, the Tomorrowland Speedway will only seat two people, period.
 

On the carpets and Dumbo, your daughter will have to sit on your lap. For reference, I’m 5’3, 112 lbs and DH is 5’5, 140 lbs. We couldn’t fit 3 across with our 18 month old last year. He had to sit on a lap.

On TSMM, one of you won’t get a “shooter,” if that makes a difference to any of you. Same with Buzz Lightyear.

I’m pretty sure the Speedway cars only hold 2 people.
 
People have advised you regarding seating 3, which usually 2 adults and a small child are fine. I noticed you that you say your husband is 6'5, so just so you know a few rides may be a little tough on the leg room. Mad Tea Party is one for sure. Test Track can be, though I think the front is a bit better. Speedway, Dumbo and Buzz may be a tad tight too. He should be able to ride anything without too much issue, but you may want to prepare him for that.

Are you sure? I saw a post specifically saying, when you have one adult with two kids, they will give you a flag to let the CMS know that the first kid can drive, the kids can switch seats, and the second kid can drive. Obviously, that's a 3 person seating scenario.

We're traveling as a 2 adult, 3 kid family, and the only rides I flagged as problems were Barnstormer and maybe 7DMT and SDD (depending on whether the CM will allow adult to sit behind two kids under 7 and treat that as riding together). My scenarios are all 1 average sized adult and two skinny 5 yos, so as long as the CMs will allow 3 across, I don't have concerns about physically fitting. Also, kids are under 44", so not looking at RnR, Space, FoP, EE in my considerations.

I was most concerned about the rides that have longer wait times.
Dumbo, Flying Carpets, and tea cups are not a worry.

For your party, the two 5 year-olds will indeed pose issues on Barnstormer and 7DMT. On Barnstormer, each car, i.e. "ride vehicle" only contains one row of two seats. The rules state that the adult must be in the same "ride vehicle" (which for a coaster is one car between couplings). You will have to utilize a rider-swap to accommodate everyone (well, you didn't state the age of your other child, but I am assuming under 7 - if 7 or over they can ride alone). 7DMT is similar except there are two rows per car, however for whatever reason they enforce the rule as "in the same row" for this one (whereas they do not for BTTMR). I do not know how SDD is treated.

This will be something to look out for as sometimes they are inconsistent with the rules. Barnstormer though is always a definite issue for parties with an odd number and smaller kids.

EDIT: And you know I totally didn't notice your username so I guess you have triplets. When you said "two skinny 5 year-olds" I had assumed two that age and then a third. It doesn't change anything I wrote above of course. You should expect seating issues at Barnstormer and 7DMT for sure. You may need to use rider-swap.

Our son was 3 1/2 at the time (last fall) and was 38inches (36#) and we (2 dads plus him) fit into Dumbo fine. It was a bit of a squeeze for us but our son had plenty of room. I can't remember if he sat in one of our laps though but i know all three of us rode that one together.

The thread where I found out about the speedway flag thing was specifically about riding with one adult and two kids under 7. Plus, one of the other posters above said they rode with 1 adult, 2 kids on speedway this past week, so I think I'm ok there.

I had come to the same conclusions as you stated for the coasters: barnstormer will definitely require a swap, 7DMT probably will although some CMs allow the adult to be in the row behind and still consider it the same car, and I haven't seen reports either way about SDD.
 
Magic Carpets have two seats in each carpet.
They will only put your family in it.
Rode two weeks ago, DS & I up front, back seat empty.
So one sits up front with child and other sits in back.
Front controls the up and down.

My husband is 6'6", I'm 5'5" and our 4 year old son is 48" and 60 lbs-ish. We could fit 3 across on a couple of rides in August. Haunted Mansion, Toy Story Mania and Buzz Lightyear (but there's only 2 shooters, but I had to help the 4 year old shoot anyhow), Pirates, Jungle cruise, tea party, Small world, River Journey.

I specifically remember my husband's legs do not fit in the back seat of the Winnie the Pooh ride, he has to sit in the front seat and no, we did not fit 3 across on that one. So we did him and our son front seat, me in the back. The back seat has less leg room. If you child is thinner you might be able to get the 3 across in the front.
 
OP, are you talking all three in one row, or in one ride vehicle?

I didn't realize that some rides had a back seat. I was basically talking about the three of us sitting next to each other. Like in the Peter Pan ride or the Frozen ride.
 
On toy story mania if you all want to shoot at targets, you can sit in the same car, just two on one side and one on the other, you can google the ride vehicle.
