Hi-

I am travelling down to WDW soon. We already have our ME tags and vouchers. My parents are also travelling down under a separate reservation. They are only staying for 5 nights and we are staying for 7. If we switch my DS (11) to their ressie, can he still ride home with us, even though they leave on the 5th night? Does ME even check reservations after the tags are sent?

As long as his flight information remains the same; you are okay.

It is critical on the return trip, because your son will be scheduled for the return trip to the airport based on flight information, not on actual room reservation.

We have had multiple people in one of our rooms, each with different returning flights.

But he does need to be registered to your room. On the day he leaves you parents room just go to the desk and add him to yours and call DME to add him to the flight info home. If he is not a registered guest they day you check out then he will not be able to take DME back to the airport.
