Yes and no. The park don't simply hit capacity. There are stages at which they limit access.
If you see the ticket booths closed up, that is the first step and indictates things may get worse.
Next they don't let APHs in.
Then they don't let Resort guests in.
Then they don't allow Reentry, at this point no one is let in. The turnstyles will have people waiting in line with no movement when this happens.
When people leave they will open up in the reverse order.

We were at DLR last year on the 27th and 28th and they def hit capacity both days. DLR actually made the news saying that tixs were not being sold by like 10am. That's what we were hearing from random conversations throughout the park. It was crazy and apparently on the 28th, it was soo crowded that they did actually limit reentry.

Yes it did close the gates completely and did have other levels of limiting entry.

Yes you can follow DL on twitter, and other sites that will relay information to see if you can still get in.
The reason it was an anomoly, is because of the weather. The park were super busy as usual then it rained. Crowds dissapeared. Then there was a sunny morning and all the locals who waited out the rain showed up with the people already planning to go. Then the next day people turned away the day before came along with the people already planning to go. All because of rain, things got worse.
Otherwise if you are a local leave early or check the news before you go. If you are going on NYE show up early and stay in the park you want to be in at night. NYE is the most sure of the day to hit full capacity and earlier than other days.

Except it doesn't happen that way. On days when it gets even possible that this will occur, there will be signs as you exit the Park cautioning that due to very busy attendance, there is a possibility of no re-entry. It would have to be a VERY long nap to be taken completely by surprise.
I will be there Thursday-Sunday. Should we not leave to take a break on Christmas Eve or Christmas Day? I don't want to be denied re-entrance. But if we go for MM, that's a looonnngggg day with no break!
The ticket booths never fully close. The first level is they stop selling 1 day tickets and block out tickets. They will continue selling one day one park tix to DCA. And they will continue selling APs.

I will be there too, as I have been for the last 10 years. The park will not close for the day. It might close temporarily, but it will reopen. It always does. I generally leave the park about 2 in the afternoon, we go have Christmas Dinner (Storytellers this year) or Christmas Eve dinner (thinking Tortilla jos), and we return about 6. We have never had an issue with reentry. We don't stay on property and we have APs.
