We have done the DiveQuest two times and loved both dives. The dive itself is in The Living Seas.
You meet outside of Epcot at the Guest Service office to the right of the entrance. They will take you "backstage" on your way to the Living Seas, sound more exciting than it is - They have to keep the trash dumpsters somewhere.
You will then go into the Cast areas of the Living Seas and be given a briefing on the dive. Remember, while diving you are "on stage" watch what you do as MANY people will be watching you. You will then be assigned a locker to go change into your wetsuit for the dive. Be escorted through the Living Seas to go up to the entry point of the dive, this is a lot of fun as you are paraded through the guests, makes you feel a little special. Just like the Monsters ging to the floor in Monster inc.
You will then do your dive and then have a post-dive briefing and viewing of the video, etc. It is a great experience.
My favorite dive moment of my life was part of th DiveQuest the second time when I had an UP CLOSE encounter with one of the BullSharks, Marylin. We had a friendly little meeting right in front of the Coral Reef Restaurant, I didn't realize it at the time where we were, but I am sure our encounter was part of many pictures and videos. I'd love to have a copy of one. I have dove quarries, the Keys and Hawaii and no where can you find as much life in one concetrated area as you can in the Living Seas.
I rate this a must do for any scuba diver.
