Does Disney make nutrition info available for the food in their parks or resorts?
I know they accommodate dietary restrictions at the TS places but it'd help me a lot if I had access to that information. (I don't really enjoy the extra attention and would rather figure it out on my own.)
 
They do at counter services. Just ask at the register. There should be a book of some sort w/ allergy information etc.
 
do you mean like calories and carbs etc..?
or do you mean like wheat or dairy or eggs?
if it's the latter you can email the special diets team ( go to the DISabilities forum and there is a link about foods etc. whom to email for food etc.)

WDW is awesome for those who have food allergies - at cs or ts- they will email you a list of available foods, where to get those foods and how ot call in advance ot speak to someone about specila food needs.

not so good about calories and carbs, etc.- you just kinda have to look at menus and guess about carbs-
This is what I do: if my hambuger at home has 35 grams of carbs then it's about the same at WDW- same with ice cream, fries etc..

I would head over to the DISabilities forum - lots of info about food needs over there.
