We are considering a trip in October-November. Are they any major things that happen during those months apart from Halloween that would impact the amount of crowding in the parks?

What are the opening hours for EE or MM during this time of the year? Thank you

Utah Educator's weekend mid-October
Christmas starts mid-November

Avengers half marathon is Nov 14-16.

Christmas Parade taping usually happens the first weekend in November. This doesn't have a major effect on most of DL, but it does affect Main Street, the Hub, and the area in front of the castle.
