Disneyland newbie and I need help!!!

You've gotten some good information about ADRs, but I'll add this: We had two park days with no ADRs going into it. One of those days, around 10:30am, my wife said she wanted to eat at Cafe Orleans. I popped out my phone and made a reservation as we were walking for 11:30am. Sometimes, it's that simple.
