Disneyland Gingerbread Cookie - Help with finding the right recipe

For the last 4 years, we've spent Thanksgiving at Disneyland. Except for the year that WOC was down, we do the dessert package Thanksgiving night for "dinner". In the box are these gingerbread cookies that are thinner and darker than the ones they sell at Trolley Treats and Main Street Bakery (picture attached). Since we obviously won't be there this year I'd like to bake these at home - they are my daughter's favorite and she normally eats all three (hers, mine, and DH's). Every recipe I've found online is for the lighter ones they sell at the bakeries. Does anyone know of a darker, softer cookie recipe that is close to these Disneyland Gingerbread Cookies?

I just pinned this recipe the other day. I haven't tried it yet, but it looks like a contender. The author specifically mentioned it is a copycat of the soft, seasonal gingerbread. https://picky-palate.com/mickey-mouse-gingerbread-man-cookies/

This is the recipe I used last year and they came out really good! Gingerbread is my favorite! We go every year at Xmas time too. Headed to WDW this year. I don’t see a ton of gingerbread items listed there. Hoping to get at least one cookie!

I just found out about this place. https://www.thegateauxshoppe.com/ I don't know if the gingerbread Mickeys are seasonal but I tried one and it was very close to the one sold at DLR during the holidays.

I just looked up that bakery! I saw it on Instagram. I wish I lived closer! lol.
