I am curious...using my Disney Visa, if I visit Epcot on 2 different days on my next trip, can I receive a meet & greet & free 5x7 photo each day?

Yes, they don't have a real high tech way of checking, they just write it down.

My husband and I each have a Visa, it is the same account number just different designs, each time they have given us 2. I don't know if they are supposed to but they do.
