Exactly how crowded does everyone think it will be the week of Thanksgiving ?

No one can tell you "exactly," but generally, the week leading up to Thanksgiving will get steadily more crowded until Thursday arrives. Thursday through Saturday will be very, very busy (particularly the Friday after Thanksgiving), and then things will start to taper off again on Sunday.

Crowds won't be at Christmas levels, but it's likely that MK, at least, will close at capacity on the Friday after Turkey Day. Disney Quest will also be a zoo that day.

we are going down the 20th and leaving the 27th so it sounds like from you that we will see all levels of crowds. We went to the Millenium Celebration and that was the most crowded I have ever seen it at all parks.
