If you want a sit-down table-service meal, depending on what food types you want - there are so many decent restaurants at Disney Springs. Frontera Cocina has good Mexican and excellent margaritas (if that's going to be part of the birthday celebration), Art Smith's Homecomin is classic Southern American fare and definitely one of my favorites in Springs. Boathouse is fish/steak and very high quality. Wine Bar George has very good food curated around wines, if you're all into wines. Morimoto is fun, large, and loud with good food. Raglan Road is also loud and very good food with multiple bars - plus with live music and entertainment. House of Blues is a chain but one I've always liked as I like cajun/southern food which is what they focus on, plus usually a musician on stage playing guitar and singing. Maria and Enzos has decent American/Italian, but I personally prefer the downstairs speakeasy, Enzo's Hideaway, with a good bar and good food in a fun basement atmosphere.
I haven't eaten in Jaleo but it gets very good reviews - I have eaten in Summer House and the food was good - the atmosphere was a little generic - I tend to like the slightly more themed spots - but I had nothing bad to say about the meal. Edison is a fun. loud bar/show, but I haven't been particularly impressed with the food. STK to me was just too loud - it sounds like a club inside, but serves steakhouse fare...not my thing.
Don't look past the idea of hitting a restaurant at another resort too - if there's something that strikes you - on a non-park day you can take a bus from Disney Springs to any other resort, enjoy dinner, then back to Disney Springs to transfer to your resort bus. Or Minnie Van/Lyft there if you don't mind spending the money. There are some excellent restaurants at some of the resorts - Jiko in Animal Kingdom Lodge, Topolino's at Riviera, Toledo at Coronado, Narcoosie's at Grand Floridian, Cake Bake Shop at Boardwalk, and Steakhouse 71 at Contemporary. And the Swan and Dolphin have some very good restaurants in them as well - they don't take Magic Band/room charge, but can be worth the visit - some favorites include Bluezoo, Il Mulino, Bourbon Steak, and Rosa Mexicano.
