Disney Springs Dilemma and advice?

We have a TREK Cafe ressie for our one evening we will be spending at disney Springs for shopping. The ressie is at 5pm. We will likely only be there from 430pm until 645ish. So not long at all.

One tradition of ours is having sundaes at Ghirardelli there and I worry with a dinner reservation we wont be hungry for the dessert. So I'm thinking of cancelling and eating CS instead? Good idea?

If so, any CS suggestions for food at Disney springs?? I've only eaten at TREX and Portobello before, no others.
 
I agree with Wolfgang Puck Express.

I'm guessing you're not on the dining plan (or does TRex take it?). But on the plan, WPE is a great use of a counter service credit. On it, though, you get dessert which would totally put me over the edge!

With such a short time at DS, have you considered having a bit of a late lunch that day so you're hungry for the ice cream? Then have a little snack for dinner later? I prefer to graze at Disney, so that's likely what I'd do, but I know everyone is different!
 

Wolfgang Puck Express is probably the best quick service on property. And they have such a large variety that usually everyone in the party can be accommodated.
 
Earl of Sandwich is a turnpike joint. All down the Florida turnpike. Why eat at a chain when you can have TRex and eat lite.
 
Yes, I've seen Earl of Sandwich at the truck stops all up I-95 to Philly from Baltimore. It's just a sandwich, but it is quick & cheap.

You can just order appetizers at T Rex too!
