I'm not a huge rollercoaster fan but I wanted to try one or two while there that are pretty tame....
Thoughts?
 
I think it is called the Great Goofini, is pretty mild. The ride lasts about a minute.

The next up, for now, is Big Thunder Mountain. It's really more rocking back and forth with a couple of hills. My kids love this thing. (So do I.) We usually ride it at least a couple of times. Riding at night is a different experience. They use fluorescent paint to change the mood. It was a few rides before I noticed the dancing at night in one of the outside buildings. The ride maxes out around 35 mph.

Next up is Space Mountain which is about the same speed as BTMRR. The big difference between BTMRR and SM is that SM is dark. You cannot see the turns as they come up making it jerkier. There are bright lights in some places but they are bright enough to make it impossible to see what is coming.

It sounds as if Rockin' Roller Coaster and Expedition Everest may be out of your desired range. Neither are like the coasters at Six Flags or Cedar Point.

The Seven Dwarfs Mine Train is in testing. I did not see a date for your trip. It might be open when you go. This is supposed to fit between Goofy and Thunder.
 
As a little kid I was terrified of roller coasters (grew out of that!) and I enjoyed Big Thunder Mountain back then. Still do, even though I ride the big coasters now. Maybe watch a ride through on youtube and see if it's something you'd be interested in? Hated Space Mountain, still don't like it, wouldn't recommend it.

If it's currently testing, it's just Imagineers who are testing it. It's not supposed to open until spring (I haven't heard anything more specific than that), but they generally do what is called "soft opening", which means they'll invite people who are in the parks to ride a ride before its official opening date, but this would just be a few days before the official opening.
 
Big Thunder Mountain - if I can do it, you can do it! What I like about it is the whole "mountain" structure - you don't feel like you're on some little exposed steel track up in the sky.
 
Maybe it's just me, but I find Big Thunder Mountain to actually be easier and more enjoyable than the Goofy ride! That would be my suggestion for a "starter" roller coaster.

I agree! Space mountain is a very rough ride , bumpy and jolting.

Both my kids rode BTMRR as their first roller coaster and they loved it!
