Does the Dream have a good selection or should I try shopping instead at Disnet Springs?

If you want them cruise themed, absolutely. They have all of the things you mentioned above in their onboard stores. Quite a wide selection. Just keep in mind most of it is more Disney Cruise line themed vs generic Disney.

They for sure have neck ties. I am pretty certain they had some DCL themed.
