Yes, they will do it for adults who for whatever reason can't be left alone.
 
I have a son who is 11 and they let us do childswap. he wont ride much and we have never had a problem. We just ask the cast memeber at the beginning. He waits with us on line and then my husband and DD go then we switch so I can ride. We really don't know until we get to the ride if he will get on or not. We use a GAC for him. Michelle

I have never had a GAC for my son, but we have routinely used Rider Swap for him as he is NOT willing to go on many rides. I have never even been questioned about it.

It's usually called "Child Swap" on discussion boards, but it is actually called "Rider Swap" by Disney. Just let the CM know what you want to do and they will help you do it.
It can be a little more complicated with a wheelchair, because some attractions load in one place and unload in another. Just make sure the CMs know what you want to do.
