We've done both and like both for different reasons. The one thing I will say is that if you decide to stay off-site I would rent a car. The hotels with off-site shuttles tend to run a couple of times in the morning and a couple of times in the evening. They really aren't convenient.
Off-site: We rent a house. Last time I rented a 5 bedroom, 3 bath private pool home for $600/wk. There was plenty of room for everyone to spread out. Kids could be put to bed and the adults could stay up. We also saved quite a bit of money by eating some meals in. I also loved that I had a washer/dryer.
On-site: We only stay on-site now if there are two people traveling. Perks are magical express, WDW transportation and magic hours.
