Anywhere that accepts credit cards...there are some kiosks that do not have a card machine so you can't use it there, but you can use it even at most of the ice cream carts. We carry a small amount of cash and use the gift card most of the time.
Disney Gift Cards can be used at any Disney-owned venue at WDW and Disneyland (or at any Disney Store in the US or at DisneyShopping.com). It can be used at shops, stores, booths, carts, restaurants, eateries, and stands in the parks, resorts, and Downtown Disney, so long as the place is A) owned by Disney and B) has an electronic card reader.
Places you can't use it - roving vendors or carts with no card readers, non-Disney venues such as any place in the Swan and Dolphin or any of the Downtown Disney hotels, the three Hess gas stations on site, or many of the stores at Downtown Disney's West Side such as the AMC theater and Virgin Record Megastore.
Basically, any place that can accept your Key to the World card can accept a Disney Gift Card.
