Port Orleans French Quarter is a good resort for an adults-only trip. King bed/corner room on the river is so nice, and plenty roomy (ask for Building 1).
When we're alone we like some rides/some shows/some resort-hopping/nice dining, all at an easy pace. Once we explored every nook and cranny of every country in the World Showcase, and sampled chocolate from each.
A fun musical evening at Jellyrolls (Boardwalk), or Scat Cat's Lounge (POFQ), or even YeHaa Bob (POR) is always on our radar. And between POR & POFQ there is a nice horse-drawn carriage ride available.
We avoid the character meals, except Garden Grill. DH loves the dinner there, and Chip & Dale are always playful with us!
And if you can't get a reservation suitable for viewing Wishes, you can get a meal from Captain Cook's in the Poly, sit on the grass next to the beach outside, and watch from there. The music is piped in, with a good view of the castle and fireworks.
