We are using the Dining Plan for our Disneymoon, and I KNOW we won't eat all that food!!!!

No, it is not the same thing. The Disney Dining Experience is a dining discount program for eligible Florida residents and annual passholders, 21 and older, which provides a 20 percent discount on food and beverages (including alcoholic beverages) at a number of Walt Disney World Resort hotel and theme park restaurants and lounges.

You do not need to purchase the no-expiration option in order to save the tickets. MYW tickets only begin their 14 day count down to expiry once used. So, you can purchase a 1 day base ticket, and get the DDP. Then, make sure that you do not use the park entry on the 1 day tickets and you can trade them in as a payment towards your next AP renewal. In other words, the cost of your MYW ticket should be thought of as a downpayment towards your next ticket purchase (you can upgrade them instead to a longer ticket if you aren't planning to renew your AP).

In a perverse sense of overplanning, I tend to calculate these things with "what I would eat on the dining plan" and "what I would eat without the dining plan" since I am more likely to share appetizers and dessert when paying OOP. Plus, I think that the DDE discount applies to alcohol (I've never had one so I'm not certain). So, if you feel like adding to your spreadsheet you could add some columns with these things factored in. Oh yeah, and don't forget to factor in tax & tip additions to your DDE calculations.
Where and when you eat matters a lot, but my eating habits tend to make the DDP attractive.
