What are tips you could share to avoid major weight gain while at Disney?

For me, I ate small breakfast, a banana or muffin as a snack around 1, then dinner between 4:30-6pm. I only had soda at dinner and drank so much water. At the resort after the parks, we sometimes got a Mickey ice cream snack or cupcake. I tracked our steps and walked between 22k-25k a day!

What do you guys do?

22-25k miles, wow. I never tracked it but that's great and clearly helps to avoid gaining weight.
I don't diet in a vacation. I typically just eat my regular breakfast, a lite something and then salad usually at lunch and a standard dinner. Maybe once in a while a dessert. And no soda .. I don't drink it, so water is my thing.

Not 22k-25k miles per day. 22 to 25 kilometers per day. Still 13-15 miles, which is above average.

I agree. Eating breakfast, a snack, and an early dinner (skipping lunch) is the way we tend to eat at Disney, too.

I try not to eat any different on vacation than I do at home. Normally a decent breakfast including eggs, I like the kids meals at the resorts or a yogurt parfait and sometimes a muffin. I don't normally snack between meals but if I do, it's fruit. For lunch if we are eating QS I'll eat a kid's meal since they normally have more than enough food for me. For supper, I tend to get a couple of appetizers, I just don't eat large meals. I will eat dessert every once in awhile,I'm a sucker for ice cream. I don't drink soft drinks, usually it's water or coffee and I enjoy refreshing adult beverages. I'm not a huge sauce eater and rarely eat anything other than chicken, and even though I'm a southerner through and through I don't eat fried food. I don't have any problems finding healthy food at WDW and if I want to eat chips and guacamole instead of a meal, I'll do it. I also get up every morning and do a half hour fast walk around whatever resort I'm staying at (used to jog but blew out my knees) and do a little yoga to stretch it all out. I don't consider the walking done at the parks as exercise since it's rarely fast or sustained enough to get my heart rate up.

Whether on vacation or at home - eat when you are truly hungry and stop when you are full. Eat real food not crap.

I gained way too much weight when I kept trying to diet. Once I adapted the above advice I lost about 60 pounds which I have now kept off for over 15 years after decades of struggle. - Nothing is off limits to me but I just find that I really like eating non-processed food for the most part. I may have a hamburger or fried chicken once or twice a year. It's not forbidden - but I have to really want it.

For me saying that certain things are always "bad" made me crazy. I just stop eating whatever it is that I am eating when I am full.

I actually eat less at Disney since I am so busy. Plus, all the walking burns off the calories from a Mickey bar (I don't eat ice cream at home, but maybe twice on a WDW trip, I will have a Mickey bar or similar. Since I often travel solo, I avoid sit down meals that require reservations, and I have never been a buffet fan, so I avoid those too. I try to pick a healthy option, too, like a salad. Sometimes I even order a kids' meal for portion control and because it offers healthy alternatives.
