Is there any way we can come to Disney and get a vacation package for all except wife..IE me and my two kids get meals, and park tickets and wife will just stay in room while we go do our thing...We want to stay at a park resort....she really cannot get around but does not want to stay home while we go...

I do not think it is possible and only way see possible is if you make trip just you and kids and add wife to resort after you arrive assuming you would still fit room size. she would be able to use DME from airport to resort from what I understand. plus even if she stays at resort how is she going to get meals if you guys are in the parks. most resorts are huge so it is not going to be a simple walk from room to eat esp if she cant get around easily.

You can book everyone but your wife on the package and add her later - I believe within 72 hours prior to checking in used to be the point where a guest could be added without being part of the package (I haven’t done this in about a year so I don’t know it this has changed, hopefully someone else can confirm). You could always add her to your reservation when you arrive but the problem in your case would be if she’s flying in with you (assuming you’re flying in) she won’t be able to get on the Magical Express with you since she won’t be on the reservation yet. You could still do this and take a cab or mears shuttle or private transportation if you wanted.

Edited to add if she really can’t get around even at the resort but wants to come with you, consider looking into a grocery delivery service (garden grocer, dizzy dolphin, etc) so she has provisions in the room as some can be quite a walk from resort amenities depending on where you stay.
 
Is a package your best option? I'd check some menus online and run the numbers to see; depending on your dining habits the dining plan may not be any kind of savings for you. I see three options:

1) You can always book a room-only reservation, buy tickets separately and pay out of pocket for dining. This option will allow you to include everyone one the room reservation but you can buy different tickets for the individuals (or no ticket if she really won't go to the parks at all). You might find a discount for the room-only, and tickets can be purchased through a 3rd party for a small savings.

2) Another option is a "ticketless package" which is not available online but you can call to book this. It would be room+dining for everyone, and buy tickets separately. Your wife would be able to use her dining credits at the resort. Ease of access and availability of dining options vary by resort, so do some research to find something that will suit her needs. I believe the deluxe resorts offer room-service; value resorts have just a food court style location.

3) A full package with room + tickets + dining. Everyone has the same parts (dining and tickets). Is there any chance your wife may join you in the parks for even an hour or two? Maybe for a meal? She would need a ticket to do so. This may not be your best option if she absolutely has no plans to leave the resort.

The Cabins at FW have a full kitchen, you could order groceries for delivery and your wife could eat without leaving. Some resorts have suites with a kitchenette, which may or may not be all that conducive to preparing a family meal but your wife could prepare food for herself. I believe DVC units have either a kitchenette or a full kitchen but I'm not very familiar with those options.

I would make the reservation for everyone room only. Don’t do a package. You can then add tickets for only those that need them. You can call and add the dining plan as part of a ticketless package. Your wife would have dining credits but anyone can use those extra credits. You could also make dining reservations for the whole family at a resort restaurant so your wife could eat with the family.
 
Regarding DVC rooms:
Studios have kitchenettes with coffee maker, toaster, microwave, and mini-fridge
1 bedroom, 2 bedroom, and grand villas all have full kitchens
 
If you do end up in a regular room where she can't easily prepare her own meals, you may want to investigate renting a scooter to get around the resort.
 
There is no need to book a package. Book room and tickets separately and pay out of pocket instead of using the dining plan or book a package without tickets and include her in the dining plan.
