There are 8 in our group. And i seem to be the only one that wants to plan and worry about things. My husband and i want to take our 3 year old to a few character dinners but want to invite everyone. If i book for 8 in advance and if the day of family members decide not to come is disney going to have a hard time seating us?:confused3
 
No - you're (almost) always better to book for the greatest number of people who may be joining you and then have fewer people at the podium (versus booking a smaller number of people and then trying to increase it).

The almost exception is any prepaid meal or meal where you need to put down a deposit - if you plan on booking the Castle or Norway, you'll want to get a firm number since the Castle is prepaid and there is a per person deposit on Norway.
