Dinners on the Eastern Cruise

HI,
I will be taking my first Disney Cruise and have been reading all of the post and noticed that people talk about Caribbean Night, formal night, etc.
Can anyone tell me when these take place on the cruise. For example, when is the formal night, Monday, Tuesday, etc.??? Is there a special dress each night of the cruise?

Sunday - rotation, formal

Wednesday - casual
Thursday - semi-formal
