Which is the best dinner time? I am leaning towards early. And if you book 2 years in advance does an early request hold any weight? We will be traveling with small children.

"best" is what works best for your family. Many people with little ones like early because there are good activities in the club/lab during late seating, and many little people don't stay up late. However, if you are coming from the west coast, late dinner may keep your kids more on their "at home" schedule.

The earlier you book, the better chance of getting your requested time. Of course, summer 2007 dates/rates aren't released yet....keep watching the internet....

If you book and are given early seating you will have early seating on the cruise. They will tell you right then if you get early or late. You can waitlist for early if you are assigned late though.

When you book (especially early booking) can you say "I want early dinner" and be given that?

If it is available at the time you book, you will get it. If it is full, you will get late dining.

Yes, a very personal decision. You're just going to have to make an educated guess.
But this far out, if you reserve early, you should get it.
What time do you eat at home? Like someone mentioned, it consider if you want to keep your "body" clock the same as home.
My wife and I always had late seating on our Caribeean cruises before kids and loved it. We are West coasters The first cruise we took with the kids on was an Alaskan cruise, and we had late seating there too. But they were 11 and 15, so older. Works great for us. If for some reason you ask for early and get late, the key is a snack at 4 pm to hold the kids if they are young. But of course, if you are a typical cruise passenger, you'll be eating 6 meals a day anyway.
